Ingredients

- 2 cups cooked rice (preferably day-old)
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, chopped
- Salt and pepper to taste
- Optional: sesame oil
Instructions
- Heat a large skillet or wok over medium-high heat and add vegetable oil until it shimmers.
- Sauté minced garlic and ginger for about 30 seconds, stirring constantly.
- Add your mixed vegetables, stir-frying for 3-4 minutes until they are vibrant and tender-crisp.
- Push the vegetables to one side of the skillet. On the empty side, add the cooked rice.
- Pour the soy sauce over the rice and mix it well with the vegetables.
- Fold in the chopped green onions and allow it to cook for another 2-3 minutes.
- Season with salt, pepper, and a drizzle of sesame oil if desired.
- Serve hot, garnished with more green onions if desired.
Notes
For best texture, use day-old rice and chop vegetables uniformly for even cooking.
