- 8 oz fettuccine or tagliatelle pasta
- 2 tablespoons truffle oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
- Mushrooms (optional)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the fettuccine or tagliatelle, cooking until al dente, following package instructions. Don’t forget to reserve a splash of the starchy pasta water before draining!
- Heat the Oil: In your skillet, pour the truffle oil over medium heat, allowing it to warm for about 30 seconds.
- Incorporate Cream: Slowly add the heavy cream to the skillet, stirring gently as it warms. Let it simmer gently for about a minute.
- Add Parmesan: Gradually sprinkle in the grated Parmesan cheese, stirring until it’s fully melted.
- Season: Taste your sauce, adding salt and pepper to enhance the flavors. If using mushrooms, fold them in now.
- Combine Pasta and Sauce: Toss the drained pasta into the skillet, ensuring every strand is cloaked in sauce. Add reserved pasta water as necessary.
- Serve and Garnish: Plate in bowls and finish with a sprinkle of fresh parsley and extra Parmesan.
Notes
For a lighter option, replace heavy cream with half-and-half or cashew cream.
