Description

  • 1 can (14 oz) coconut milk
  • 1 tablespoon fish sauce
  • Fresh cilantro, for garnish
  • Jasmine rice or noodles, for serving

Instructions

  1. Combine the Ingredients: In a large mixing bowl, gently mix the ground chicken, breadcrumbs, egg, minced garlic, ginger, lime juice, Thai red curry paste, salt, and pepper until everything comes together effortlessly. Form the mixture into about 1-inch meatballs and place aside.
  2. Brown the Meatballs: Heat oil in a large skillet over medium heat. Add the meatballs in batches and brown them on all sides, about 8-10 minutes.
  3. Simmer in the Sauce: Once browned, pour in the coconut milk and sprinkle over the fish sauce. Stir to combine and bring to a gentle simmer.
  4. Return the Meatballs: Carefully add the meatballs back into the skillet, ensuring they are submerged in the sauce. Let them simmer for another 10-15 minutes.
  5. Serve and Garnish: Spoon the meatballs over jasmine rice or noodles, then garnish with fresh cilantro.

Notes
