- 2 cups bell peppers, diced
- 1 cup onions, diced
- 1 cup vinegar (white or apple cider)
- 1 cup sugar
- 1 tablespoon mustard seeds
- 1 tablespoon celery seeds
- Salt and black pepper to taste
Instructions
- Combine the diced bell peppers and onions in a large mixing bowl.
- In a medium saucepan, combine the vinegar, sugar, mustard seeds, celery seeds, salt, and black pepper. Bring to a simmer over medium heat, stirring continuously until the sugar dissolves.
- Pour the warm vinegar mixture over the peppers and onions, stirring gently to coat.
- Allow the mixture to sit at room temperature for at least 30 minutes to marinate.
- Transfer the relish into clean mason jars, seal tightly, and store in the refrigerator for up to two weeks.
Notes
The relish tastes even better after a day or two in the fridge, allowing the flavors to develop further. Consider adding diced jalapeños for spiciness or a sprig of fresh thyme for an earthy depth.
