Description

A vibrant and delicious relish featuring a medley of bell peppers and onions, perfect for topping hot dogs, grilled meats, or as a unique addition to salads.


Ingredients

  • 2 cups bell peppers, diced
  • 1 cup onions, diced
  • 1 cup vinegar (white or apple cider)
  • 1 cup sugar
  • 1 tablespoon mustard seeds
  • 1 tablespoon celery seeds
  • Salt and black pepper to taste

Instructions

  1. Combine the diced bell peppers and onions in a large mixing bowl.
  2. In a medium saucepan, combine the vinegar, sugar, mustard seeds, celery seeds, salt, and black pepper. Bring to a simmer over medium heat, stirring continuously until the sugar dissolves.
  3. Pour the warm vinegar mixture over the peppers and onions, stirring gently to coat.
  4. Allow the mixture to sit at room temperature for at least 30 minutes to marinate.
  5. Transfer the relish into clean mason jars, seal tightly, and store in the refrigerator for up to two weeks.

Notes

The relish tastes even better after a day or two in the fridge, allowing the flavors to develop further. Consider adding diced jalapeños for spiciness or a sprig of fresh thyme for an earthy depth.
