Description

Deliciously soft and buttery Strawberry Sugar Cookie Bars topped with luscious strawberry jam and fresh strawberries.


Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup strawberry jam
  • 1 cup fresh strawberries, chopped
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your 9×13 inch baking dish thoroughly.
  3. Beat together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually fold the dry mix into the batter, stirring until just combined.
  7. Spread two-thirds of the dough across the bottom of the prepared baking dish.
  8. Spread the strawberry jam over the dough and scatter the chopped strawberries on top.
  9. Crumble the remaining dough over the strawberries.
  10. Bake for 25-30 minutes, until golden brown.
  11. Remove from the oven and cool slightly before cutting into squares.
  12. Dust with powdered sugar if desired.

Notes

Ensure your butter is softened to room temperature for creamy mixtures. Avoid overmixing to keep the bars tender.
