Instructions
- Mix the sourdough starter and warm water until smooth and well combined.
- Gradually add the flour, salt, sugar, and olive oil, stirring until a shaggy dough forms.
- Gently fold in the diced potatoes, ensuring they are evenly distributed throughout the dough.
- Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
- Place the dough in a greased bowl and cover it with a kitchen towel. Let it rise in a warm spot for 1-2 hours.
- Preheat the oven to 375°F (190°C) while your dough rises.
- Once the dough has risen, punch it down to release excess gas.
- Shape it into a loaf and place it in a greased loaf pan to rise for another 30 minutes.
