- 1 package of puff pastry sheets
- 1 cup cooked sausage, crumbled
- 4 large eggs
- 1/2 cup shredded cheese (Cheddar, Mozzarella, or Pepper Jack)
- Salt and pepper to taste
- 1 egg for egg wash
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry sheets and cut them into 4-inch squares.
- Whisk together the eggs until frothy. Stir in the crumbled sausage and shredded cheese, seasoning with salt and pepper.
- Place a generous spoonful of the sausage mixture in the center of each pastry square.
- Fold the pastry over to enclose the filling and seal the edges tightly.
- Brush the tops with the beaten egg.
- Bake for 15-20 minutes or until golden brown and puffed.

Notes
You can assemble the puffs a day in advance and bake them fresh in the morning. Swap the sausage for bacon or add veggies for customization.
