- 1 lemon, quartered

Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Rub the chicken all over with olive oil and season generously with salt and pepper.
- Stuff the cavity with minced garlic, lemon quarters, and fresh herbs.
- Place the chicken in a roasting pan, breast side up.
- Roast for about 75 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
- Serve with your choice of sides.
