Description

A beautifully roasted whole chicken with crispy skin and tender meat, perfect for family gatherings or comforting weeknight dinners.


Ingredients

  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 lemon, quartered
  • Fresh herbs (such as rosemary, thyme, or parsley)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken all over with olive oil and season generously with salt and pepper.
  4. Stuff the cavity with minced garlic, lemon quarters, and fresh herbs.
  5. Place the chicken in a roasting pan, breast side up.
  6. Roast for about 75 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
  8. Serve with your choice of sides.

Notes
