- 1 cup ricotta cheese
- 2 ripe bananas, mashed
- 1/3 cup sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 teaspoon orange zest
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease them.
- Mix together the ricotta cheese, mashed bananas, sugar, vegetable oil, eggs, vanilla extract, lemon zest, and orange zest in a large bowl.
- Combine the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
- Blend the dry ingredients into the wet ingredients until just combined; do not overmix.
- Fill each muffin cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for a few minutes in the pan, then transfer to a wire rack.
Notes
Make sure your ingredients are at room temperature for better results. Muffins can be customized by adding chocolate chips or nuts.
