Description

Delicious and fluffy muffins bursting with the flavors of ripe bananas, creamy ricotta, and vibrant citrus zests.


Ingredients

  • 1 cup ricotta cheese
  • 2 ripe bananas, mashed
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease them.
  2. Mix together the ricotta cheese, mashed bananas, sugar, vegetable oil, eggs, vanilla extract, lemon zest, and orange zest in a large bowl.
  3. Combine the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
  4. Blend the dry ingredients into the wet ingredients until just combined; do not overmix.
  5. Fill each muffin cup about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool for a few minutes in the pan, then transfer to a wire rack.

Notes

Make sure your ingredients are at room temperature for better results. Muffins can be customized by adding chocolate chips or nuts.
