Instructions
- Preheat your oven to 350°F (175°C).
- Combine the softened cream cheese, sugar, and vanilla extract in a mixing bowl. Use an electric mixer to blend until smooth and creamy.
- Spread the drained pineapple chunks evenly in your baking dish.
- Pour the cream cheese mixture over the pineapple, spreading it evenly with your spatula.
- Mix the crushed graham crackers, melted butter, and chopped pecans in a separate bowl. Sprinkle this mixture generously over the cream cheese layer.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool slightly before serving.

You can prepare the cream cheese layer a day in advance. Store it in the fridge and add the topping right before baking.
