Description

A delightful dessert featuring layers of cream cheese, caramelized pineapple, and crunchy pecans, perfect for summer gatherings.


Ingredients

  • 1 can pineapple chunks, drained
  • 1 package cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1 cup crushed graham crackers
  • 1/2 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the softened cream cheese, sugar, and vanilla extract in a mixing bowl. Use an electric mixer to blend until smooth and creamy.
  3. Spread the drained pineapple chunks evenly in your baking dish.
  4. Pour the cream cheese mixture over the pineapple, spreading it evenly with your spatula.
  5. Mix the crushed graham crackers, melted butter, and chopped pecans in a separate bowl. Sprinkle this mixture generously over the cream cheese layer.
  6. Bake for 30-35 minutes or until the top is golden brown.
  7. Allow to cool slightly before serving.

Notes

You can prepare the cream cheese layer a day in advance. Store it in the fridge and add the topping right before baking.
