Instructions

- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
- Add the dry mixture to the wet batter, stirring gently until just combined.
- Fold in the diced peaches.
- Drop generous mounds of dough onto a parchment-lined baking sheet.
- Sprinkle the tops with additional sugar.
- Bake for 12-15 minutes until edges turn golden and centers are slightly soft.
- Allow the cookies to cool on the baking sheet before transferring to a wire rack.
