Description

Ingredients

  • 1 lb carrots, peeled and cut into evenly sized sticks about 2 to 3 inches long
  • 1 lb fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme or 1 tablespoon fresh chopped thyme
  • 1 tablespoon balsamic vinegar, optional
  • 1/4 cup finely grated Parmesan cheese, optional

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the carrots by peeling and slicing them into sticks.
  3. Wash the green beans thoroughly and trim the ends.
  4. Combine the vegetables in a large mixing bowl and drizzle with olive oil.
  5. Season with salt, black pepper, garlic powder, onion powder, and thyme.
  6. Spread the seasoned veggies on a baking sheet in a single layer.
  7. Roast in the oven for 20 to 25 minutes, stirring halfway through.
  8. Add balsamic vinegar during the last 5 minutes of roasting, if desired.
  9. Check the vegetables for doneness, then remove from the oven.
  10. Transfer to a serving dish and sprinkle with Parmesan cheese, if using.

Notes

For a vegan option, omit the Parmesan cheese. You can use frozen green beans, ensuring they are thawed and dried before roasting.
