Description
A creamy, one-pot dish featuring tender salmon fillets and silky orzo pasta in a luscious lemon sauce.
Ingredients
Scale
- 4 Salmon Fillets
- 1 cup Orzo Pasta
- 1 cup Heavy Cream
- 1/4 cup Lemon Juice
- 1 tbsp Lemon Zest
- 3 cloves Garlic, minced
- 1/4 cup Fresh Herbs (Parsley and Dill), chopped
- Salt, to taste
- Pepper, to taste
- 2 tbsp Olive Oil
Instructions
- Bring a large pot of salted water to a rapid boil. Add the orzo and cook according to the package instructions until al dente. Once cooked, drain the orzo and drizzle with olive oil to prevent sticking.
- Heat a drizzle of olive oil over medium heat in the same pot. Season the salmon fillets with salt and pepper and carefully lay them skin-side down. Cook for about 4-5 minutes per side until golden and cooked through. Remove the salmon and set aside.
- Sauté the minced garlic in the residual aromas for 30 seconds until fragrant.
- Pour in the heavy cream and lemon juice, stirring to combine.
- Add the cooked orzo back along with the chopped herbs and lemon zest. Stir until heated through.
- Serve the creamy orzo in bowls, topping each with a piece of salmon and garnishing with additional herbs and lemon zest.
Notes
Consider adding seasonal vegetables like spinach or asparagus for added nutrition. Make-ahead options are available by prepping salmon and orzo separately.
