Description

A creamy, one-pot dish featuring tender salmon fillets and silky orzo pasta in a luscious lemon sauce.


Ingredients

  • 4 Salmon Fillets
  • 1 cup Orzo Pasta
  • 1 cup Heavy Cream
  • 1/4 cup Lemon Juice
  • 1 tbsp Lemon Zest
  • 3 cloves Garlic, minced
  • 1/4 cup Fresh Herbs (Parsley and Dill), chopped
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Olive Oil

Instructions

  1. Bring a large pot of salted water to a rapid boil. Add the orzo and cook according to the package instructions until al dente. Once cooked, drain the orzo and drizzle with olive oil to prevent sticking.
  2. Heat a drizzle of olive oil over medium heat in the same pot. Season the salmon fillets with salt and pepper and carefully lay them skin-side down. Cook for about 4-5 minutes per side until golden and cooked through. Remove the salmon and set aside.
  3. Sauté the minced garlic in the residual aromas for 30 seconds until fragrant.
  4. Pour in the heavy cream and lemon juice, stirring to combine.
  5. Add the cooked orzo back along with the chopped herbs and lemon zest. Stir until heated through.
  6. Serve the creamy orzo in bowls, topping each with a piece of salmon and garnishing with additional herbs and lemon zest.

Notes

Consider adding seasonal vegetables like spinach or asparagus for added nutrition. Make-ahead options are available by prepping salmon and orzo separately.
