Description

A heartwarming Southern comfort food, this tomato gravy features sweet caramelized onions and fire-roasted tomatoes, creating a creamy and flavorful sauce perfect for biscuits.

Ingredients

Scale
  • 3 tablespoons butter or bacon grease
  • 3 tablespoons all-purpose flour
  • 1 small yellow onion, chopped
  • 1 (15 oz) can diced tomatoes (fire-roasted recommended)
  • 1/4 cup heavy cream or whole milk (optional)
  • 1/4 cup chicken or vegetable stock
  • Salt and freshly cracked black pepper to taste
  • Hot sauce, a few dashes (optional)

Instructions

  1. Melt the butter or bacon grease in your skillet over medium heat.
  2. Sauté the chopped onion until translucent and fragrant, about 3-4 minutes.
  3. Create the roux by sprinkling in the flour and mixing constantly for 1-2 minutes until golden brown.
  4. Add the diced tomatoes, using their juices to deglaze the pan.
  5. Stir in the chicken or vegetable stock and bring to a gentle simmer.
  6. Incorporate the heavy cream or milk if desired, stirring until well combined.
  7. Season with salt, pepper, and hot sauce to taste.
  8. Serve hot over freshly baked biscuits or your food of choice.

Notes

Refrigerate leftovers for up to a week. Can be frozen for up to three months.
