Description

Delightful cookies with a chewy texture, studded with butterscotch chips and rolled oats, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Beat together the softened unsalted butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add in the eggs one at a time, blending well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking soda, and salt in another bowl.
  6. Gradually add the dry mixture to the butter and sugar blend, stirring until just combined.
  7. Fold in the rolled oats and butterscotch chips.
  8. Drop portions of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend, and use gluten-free oats. You can also freeze the cookie dough and bake fresh cookies later.
