- 1 cup rolled oats
- ½ cup all-purpose flour
- ½ cup brown sugar
- ¼ cup granulated sugar
- ½ cup unsalted butter, softened
- ½ cup raisins
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a square 9×9-inch baking dish lined with parchment paper.
- Cream the butter, brown sugar, and granulated sugar until fluffy.
- Mix in the egg and vanilla extract until smooth.
- Whisk together the oats, flour, baking soda, cinnamon, and salt in a separate bowl.
- Combine the dry ingredients with the wet mixture until just combined.
- Fold in the raisins using a spatula.
- Spread the batter into the prepared baking dish.
- Bake for 20-25 minutes until golden-brown and a toothpick comes out clean.
- Cool in the dish for 15 minutes before cutting into squares.
Notes
For a vegan version, substitute the egg with a flax egg and use coconut oil instead of butter. Store bars in an airtight container in the fridge for up to a week.
