Description

Delicious and chewy oatmeal raisin bars that blend heartiness with sweetness, perfect for any occasion.


Ingredients

  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, softened
  • ½ cup raisins
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a square 9×9-inch baking dish lined with parchment paper.
  3. Cream the butter, brown sugar, and granulated sugar until fluffy.
  4. Mix in the egg and vanilla extract until smooth.
  5. Whisk together the oats, flour, baking soda, cinnamon, and salt in a separate bowl.
  6. Combine the dry ingredients with the wet mixture until just combined.
  7. Fold in the raisins using a spatula.
  8. Spread the batter into the prepared baking dish.
  9. Bake for 20-25 minutes until golden-brown and a toothpick comes out clean.
  10. Cool in the dish for 15 minutes before cutting into squares.

Notes

For a vegan version, substitute the egg with a flax egg and use coconut oil instead of butter. Store bars in an airtight container in the fridge for up to a week.
