- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup whipped topping
- 1/2 cup pink velvet cake mix (or strawberry cake mix)
- Graham cracker crumbs for coating
- Pink food coloring (optional)
Instructions
- Beat the softened cream cheese using an electric mixer until smooth and fluffy.
- Incorporate the powdered sugar and vanilla extract, mixing until well combined.
- Fold in the whipped topping and pink velvet cake mix until well-blended. If desired, add pink food coloring and mix gently.
- Cover the bowl with plastic wrap and chill for about 30 minutes.
- Use a scoop or tablespoon to portion out the cheesecake mixture and roll into balls.
- Roll each ball in graham cracker crumbs until fully coated.
- Place the bites on a parchment-lined tray and chill until ready to serve.
Notes
These bites can be prepared a day in advance. Store in the fridge until serving. Customize with different cake mixes or toppings as desired.
