Description

A vibrant Mediterranean Pasta with marinated chicken, cherry tomatoes, and feta cheese that brings a taste of the Mediterranean to your dinner table.


Ingredients

  • 8 oz Angel Hair Pasta
  • 1 lb Juicy Marinated Chicken
  • 1 cup Cherry Tomatoes, halved
  • 2 cups Fresh Spinach
  • 1/2 cup Olives (Kalamata preferred)
  • 2 tbsp Lemon Juice
  • 3 cloves Garlic, minced
  • 1/2 cup Feta Cheese, crumbled

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the angel hair pasta and cook according to package instructions until al dente. Reserve a bit of the pasta water before draining and set the pasta aside.
  2. Cook the Chicken: In a wide skillet over medium heat, add the marinated chicken. Cook for about 5–7 minutes on each side, or until golden brown and fully cooked through, ensuring it reaches an internal temperature of 165°F (75°C).
  3. Sauté the Garlic: As soon as the chicken is cooked, add minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
  4. Add Vegetables and Pasta: Toss in the cherry tomatoes, fresh spinach, and olives. Cook for 2-3 minutes until the spinach wilts and the tomatoes soften. Stir in the cooked pasta, mixing everything well to combine.
  5. Drizzle with Lemon: Squeeze fresh lemon juice over the pasta. Mix it through; add a splash of reserved pasta water if needed for creaminess.
  6. Top with Feta: Remove the skillet from heat and sprinkle crumbled feta cheese over the pasta.

Notes

You can make this dish vegetarian by omitting the chicken and substituting it with chickpeas or additional vegetables.
