Description

A delightful fusion of sweet and spicy salmon bites paired with a vibrant mango salsa, perfect for summer gatherings or a comforting dinner.


Ingredients

  • Salmon fillets
  • Maple syrup
  • Sriracha sauce
  • Mango
  • Red onion
  • Cilantro
  • Lime
  • Cooked rice
  • Bell peppers
  • Cucumber
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the salmon into bite-sized pieces, approximately 1-2 inches, and season them with salt and pepper.
  3. Mix maple syrup and Sriracha sauce until well combined to create a glaze.
  4. Coat the salmon bites in the maple Sriracha glaze.
  5. Place the salmon on a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes, or until flaky.
  7. Combine diced mango, red onion, cilantro, lime juice, and salt and pepper in a separate bowl for the salsa.
  8. Serve in bowls with rice topped with salmon and mango salsa, garnished with bell peppers and cucumbers.

Notes

Make the mango salsa in advance for better flavor melding. Adjust Sriracha for desired spice level.
