Description
A refreshing and effervescent drink combining the bright flavors of lemon with sparkling water and a touch of vanilla.
Ingredients

- 1/3 Cup Fresh Lemon Juice
- 1/4 Cup Granulated Sugar
- 1/4 Cup Water
- Zest of 1 Lemon
- 1/2 Teaspoon Pure Vanilla Extract
- 1 Cup Chilled Sparkling Water
- 1/2 Cup Chilled Non-Alcoholic Sparkling Wine or Extra Sparkling Water
- Ice Cubes
- 1 Small Lemon, Thinly Sliced
- Fresh Mint Sprigs for Garnish
Instructions
- Combine fresh lemon juice, granulated sugar, water, and lemon zest in a small saucepan. Heat over medium heat, stirring constantly until sugar dissolves (about 2-3 minutes).
- Remove from heat, stir in pure vanilla extract, and let it cool completely.
- Strain the syrup through a fine mesh strainer into a container to remove zest particles.
- Fill two large wine glasses halfway with ice cubes.
- Pour 3 tablespoons of the cooled syrup into each glass.
- Add 1/2 cup of chilled sparkling water and 1/4 cup of non-alcoholic sparkling wine to each glass.
- Gently stir to combine without excessive agitation.
- Garnish with thin lemon slices and fresh mint sprigs; serve immediately.
Notes
Serve fresh for the best flavor. Prepare syrup ahead of time and store in the fridge for up to a week.
