Description

Succulent chicken thighs paired with creamy orzo infused with bright lemon flavors.


Ingredients

  • 4 Chicken Thighs, skin-on
  • 2 tablespoons Olive Oil
  • 1 cup Pearl Orzo
  • 2 cups Chicken Broth
  • Juice and Zest of 1 Fresh Lemon
  • 1/2 cup Feta Cheese, crumbled
  • 2 cloves Garlic, minced
  • 1/4 cup Fresh Parsley, chopped
  • Salt and Pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper.
  2. Carefully place the chicken in the hot skillet and sear for about 5-7 minutes on each side until golden-brown.
  3. Remove the chicken and set aside, letting it rest while preparing the orzo.
  4. Add minced garlic to the same skillet and sauté for about 1 minute until fragrant.
  5. Pour in the pearl orzo and stir to combine with the garlic-infused oil.
  6. Pour in the chicken broth, fresh lemon juice, and lemon zest, stirring well.
  7. Return the chicken thighs to the skillet, nestling them in the orzo mixture. Bring to a simmer, cover, and cook for about 20 minutes.
  8. Once cooked, sprinkle crumbled feta cheese and chopped parsley over the top. Serve warm with extra lemon wedges.

Notes

For extra zest, serve with lemon wedges on the side. You can also add red pepper flakes for a hint of spice.
