Description

A delightful dish featuring tender salmon fillets in a fragrant lemon butter sauce, paired with crispy potatoes and vibrant broccoli.


Ingredients

  • 4 Salmon Fillets
  • 1 Fresh Lemon (juice and zest)
  • 4 tbsp Unsalted Butter (or ghee/olive oil)
  • 2 cups Yukon Gold or Red Potatoes, cubed
  • 2 cups Fresh Broccoli Florets
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • 2 cloves Minced Garlic (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the potatoes into small cubes and toss them with olive oil, salt, and pepper. Spread on a baking sheet and bake for about 20 minutes.
  3. Season the salmon fillets with salt and pepper. Melt butter in a saucepan and stir in lemon juice and zest. Add garlic if using.
  4. Add the broccoli to the baking sheet with about 10 minutes left on the potatoes, drizzling with olive oil, salt, and pepper.
  5. Place the salmon on the baking sheet during the last 5 minutes, brushing with the lemon butter sauce.
  6. Serve the salmon, potatoes, and broccoli together, drizzling with any remaining lemon butter sauce.

Notes

You can prepare the lemon butter sauce in advance and reheat it before serving.
