- 8 slices Corned Beef
- 1 cup Sauerkraut
- 1/2 cup Mayonnaise
- 1 tablespoon Worcestershire Sauce

- 1 tablespoon Swerve Confectioner’s Sugar
- 1 teaspoon Horseradish Sauce
- 1 teaspoon Paprika
Instructions
- Melt Cheese: Heat your non-stick skillet over medium heat. Sprinkle the shredded Swiss cheese evenly over the bottom. Watch as it melts, bubbling and browning in just 2-3 minutes.
- Prepare the Creamy Filling: Combine mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve confectioner’s sugar, horseradish, and paprika in a mixing bowl. Stir until smooth.
- Assemble the Roll-Up: Once the cheese is melted, remove it from heat. Scoop the creamy mixture onto the cheese, spreading evenly, then layer corned beef and sauerkraut on top.
- Roll and Shape: Gently lift one edge of the cheese and roll towards the other side, enclosing the filling.
- Crisp Up: Return the skillet to medium heat and place roll-ups seam-side down. Crisp for 2-3 minutes until golden, then flip to crisp all sides.
- Serve: Slice the roll-ups in half and serve warm.
