Description

A delicious low-carb twist on the classic Reuben, featuring crispy Swiss cheese rolled around savory corned beef, tangy sauerkraut, and a creamy filling.


Ingredients

  • 2 cups Shredded Swiss Cheese
  • 8 slices Corned Beef
  • 1 cup Sauerkraut
  • 1/2 cup Mayonnaise
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Sugar-Free Ketchup
  • 1 tablespoon Swerve Confectioner’s Sugar
  • 1 teaspoon Horseradish Sauce
  • 1 teaspoon Paprika

Instructions

  1. Melt Cheese: Heat your non-stick skillet over medium heat. Sprinkle the shredded Swiss cheese evenly over the bottom. Watch as it melts, bubbling and browning in just 2-3 minutes.
  2. Prepare the Creamy Filling: Combine mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve confectioner’s sugar, horseradish, and paprika in a mixing bowl. Stir until smooth.
  3. Assemble the Roll-Up: Once the cheese is melted, remove it from heat. Scoop the creamy mixture onto the cheese, spreading evenly, then layer corned beef and sauerkraut on top.
  4. Roll and Shape: Gently lift one edge of the cheese and roll towards the other side, enclosing the filling.
  5. Crisp Up: Return the skillet to medium heat and place roll-ups seam-side down. Crisp for 2-3 minutes until golden, then flip to crisp all sides.
  6. Serve: Slice the roll-ups in half and serve warm.
