Instructions
- Preheat the oven to 350°F (175°C) and grease your donut pan.
- Combine dry ingredients: In a mixing bowl, whisk together almond flour, erythritol, baking powder, ground cinnamon, and a pinch of salt.
- Mix wet ingredients: In another bowl, whisk the eggs, then add applesauce and vanilla extract until smooth.
- Combine wet and dry: Gently pour the wet mixture into the dry mixture. Stir until just combined.
- Fill the donut pan: Spoon the batter into the prepared pan, filling each mold about 3/4 full.
- Bake: Place the pan in the preheated oven and bake for 12–15 minutes until golden brown.
- Cool the donuts: Let them cool briefly in the pan, then transfer to a wire rack.
- Prepare the coating: In a separate bowl, mix erythritol and cinnamon for the coating.
- Coat the donuts: Roll or dust each donut in the cinnamon-sweetener mixture before serving.
Notes
For a moist texture, ensure your applesauce is not too watery. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month.
