Description

Delicious low-carb donuts infused with cinnamon and sweetened with erythritol, capturing the essence of traditional donuts without the guilt.

Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup erythritol (or another keto-friendly sweetener)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon (for the batter)
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/4 cup erythritol (for the coating)
  • 1 tsp cinnamon (for the coating)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your donut pan.
  2. Combine dry ingredients: In a mixing bowl, whisk together almond flour, erythritol, baking powder, ground cinnamon, and a pinch of salt.
  3. Mix wet ingredients: In another bowl, whisk the eggs, then add applesauce and vanilla extract until smooth.
  4. Combine wet and dry: Gently pour the wet mixture into the dry mixture. Stir until just combined.
  5. Fill the donut pan: Spoon the batter into the prepared pan, filling each mold about 3/4 full.
  6. Bake: Place the pan in the preheated oven and bake for 12–15 minutes until golden brown.
  7. Cool the donuts: Let them cool briefly in the pan, then transfer to a wire rack.
  8. Prepare the coating: In a separate bowl, mix erythritol and cinnamon for the coating.
  9. Coat the donuts: Roll or dust each donut in the cinnamon-sweetener mixture before serving.

Notes

For a moist texture, ensure your applesauce is not too watery. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month.
