Description

Experience Caribbean flavors with this Jerk Chicken & Mango Slaw Bowl featuring spicy, tender chicken and a refreshing mango slaw.


Ingredients

  • 2 lbs Jerk Seasoned Chicken (thighs or breasts)
  • 1 ripe Mango, diced
  • 2 cups Cabbage, shredded
  • 1 cup Carrots, shredded
  • 1/2 cup Green Onions, chopped
  • 1/4 cup Cilantro, chopped
  • 2 Lime wedges
  • 2 tbsp Honey
  • 1/2 cup Sour Cream or Greek Yogurt
  • 2 cups Rice or Fresh Greens

Instructions

  1. Marinate the chicken in jerk seasoning for at least 30 minutes.
  2. Cook the chicken on a grill or in an oven until it reaches an internal temperature of 165°F (75°C).
  3. Prepare the slaw by mixing the diced mango, shredded cabbage, shredded carrots, and chopped green onions.
  4. Make the honey-lime cream by whisking together honey, sour cream (or Greek yogurt), and lime juice.
  5. Assemble your bowl with grilled chicken on a bed of rice or fresh greens, topped with mango slaw.
  6. Drizzle with honey-lime cream and garnish with fresh cilantro and lime wedges.

Notes

Marinate chicken a day ahead for enhanced flavor. Customize with your favorite vegetables.
