Description

A delightful dessert that combines the tropical flavors of pineapple and coconut with creamy whipped cream and cream cheese, creating a light and fluffy treat.


Ingredients

  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup sweetened shredded coconut
  • 1 cup heavy whipping cream
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows (optional)
  • Chopped nuts (optional, for garnish)

Instructions

  1. In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar and vanilla extract, blending until smooth.
  3. In another bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture.
  5. Carefully fold in the crushed pineapple and shredded coconut. Add marshmallows if using.
  6. Spoon the mixture into a serving dish, cover, and refrigerate for at least 2 hours.
  7. Before serving, sprinkle with chopped nuts if desired.

Notes

Chill your mixing bowl and beaters before whipping the cream for better results. This dish can be made a day in advance.
