Colorful skewers of marinated tofu and fresh vegetables, grilled to perfection with aromatic za’atar spices.

- 14 ounces firm tofu
- 2 tablespoons olive oil
- 2 tablespoons za’atar spice blend
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Vegetables for skewering (bell peppers, zucchini, cherry tomatoes, red onion)
- Skewers (wooden or metal)
Instructions
- Press the tofu: Wrap in paper towels and place under a heavy object for 20-30 minutes. Cut into 1-inch cubes.
- Prepare the marinade: Combine olive oil, za’atar, lemon juice, and salt and pepper in a mixing bowl.
- Marinate the tofu: Toss the tofu cubes in the marinade and let sit for at least 30 minutes.
- Skewer the tofu and vegetables, alternating for a colorful presentation.
- Preheat the grill to medium-high heat.
- Grill the skewers for 10-15 minutes, turning occasionally.
- Serve and enjoy, garnishing with fresh herbs or olive oil if desired.
Notes
Marinate tofu ahead of time for convenience. For an indoor alternative, use an air fryer or grill pan.
