Description

A warm and inviting casserole filled with shredded chicken, black beans, corn, and topped with melted cheese, perfect for any occasion.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 can diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Tortilla chips or tortillas (optional for layering)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine shredded chicken, black beans, corn, bell pepper, onion, half of the cheese, sour cream, diced tomatoes, taco seasoning, salt, and pepper in a large mixing bowl.
  3. Layer the chicken mixture evenly in a greased baking dish.
  4. Top with remaining cheese.
  5. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  6. Let it cool slightly before serving.

Notes

Make-ahead tip: Assemble the casserole the night before and store it in the fridge. Just bake it when ready.
