Description

A timeless classic egg mayo sandwich featuring a creamy filling of boiled eggs, mayonnaise, and mustard, perfect for any occasion.


Ingredients

  • 4 Boiled Eggs, chopped
  • 3 tbsp Mayonnaise
  • 1 tsp Mustard Sauce
  • Salt & Black Pepper to Taste
  • 2 tbsp Onion, finely chopped
  • 2 tbsp Fresh Parsley, chopped
  • 4 slices Bread
  • Butter for spreading

Instructions

  1. Place the chopped boiled eggs into a mixing bowl. With a fork, gently mash the eggs until they’re slightly broken, but aim for a somewhat chunky texture rather than a purée.
  2. Add the mayonnaise and mustard along with the finely chopped onion, parsley, salt, and black pepper to the bowl. Mix everything together carefully until combined.
  3. Spread a thin layer of butter on one side of every slice of bread.
  4. Mound your egg mayo mixture generously on the unbuttered side of two slices of bread.
  5. Lay the second slices of bread on top, buttered side facing outwards.
  6. Cut the sandwiches into halves or triangles and serve fresh.

Notes

Make-ahead tips include preparing the egg mayo mixture a day in advance. Consider using quail eggs for a gourmet touch, or Greek yogurt instead of mayonnaise for a lighter twist.
