Description

A unique frozen dessert that combines the rich sweetness of fresh carrots with aromatic spices, delivering a cool, creamy indulgence perfect for warm days.


Ingredients

  • 1 pound Fresh Carrots (sliced)
  • 2 tablespoons Butter (melted)
  • 2 tablespoons Light Brown Sugar
  • 1/8 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 cup Milk
  • 2 cups Heavy Cream (cold)
  • 14 ounces Sweetened Condensed Milk (canned)

Instructions

  1. Prepare the carrots by peeling and slicing them into smaller pieces for quicker cooking. Boil until tender for about 15 minutes, then let cool.
  2. Create the carrot puree by blending cooked carrots, melted butter, brown sugar, salt, cinnamon, and nutmeg until silky smooth.
  3. Whisk the cold milk and heavy cream together in a separate bowl until blended and frothy.
  4. Combine the pureed carrot mixture with the milk and cream blend, then mix in the sweetened condensed milk.
  5. Churn the mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve texture.
  6. Freeze the soft ice cream in an airtight container for at least 4 hours to firm up.
  7. Serve the carrot ice cream topped with fresh herbs, nuts, or a drizzle of caramel.

Notes
