- 2 cups Heavy Cream (cold)
- 14 ounces Sweetened Condensed Milk (canned)
Instructions
- Prepare the carrots by peeling and slicing them into smaller pieces for quicker cooking. Boil until tender for about 15 minutes, then let cool.
- Create the carrot puree by blending cooked carrots, melted butter, brown sugar, salt, cinnamon, and nutmeg until silky smooth.
- Whisk the cold milk and heavy cream together in a separate bowl until blended and frothy.
- Combine the pureed carrot mixture with the milk and cream blend, then mix in the sweetened condensed milk.
- Churn the mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve texture.
- Freeze the soft ice cream in an airtight container for at least 4 hours to firm up.
- Serve the carrot ice cream topped with fresh herbs, nuts, or a drizzle of caramel.
