Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Pasta, rice, or mashed potatoes for serving

Instructions

  1. Heat the skillet: Pour olive oil into a large skillet over medium heat.
  2. Season the chicken: Sprinkle salt and pepper on both sides; cook for 6-7 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. Sauté mushrooms and garlic: Add minced garlic and sliced mushrooms to the skillet, cooking for about 5 minutes.
  5. Create the creamy sauce: Pour in the heavy cream and stir until combined.
  6. Add spinach: Toss in fresh spinach and stir until wilted, about 2-3 minutes.
  7. Return the chicken to the skillet, coating in sauce; simmer for an additional minute.
  8. Serve over pasta, rice, or mashed potatoes.
