- 1 pound chicken breast
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1 cup fresh vegetables (bell peppers, zucchini, or broccoli)
- 1 cup chicken broth
- Salt and pepper to taste
- 1 tablespoon fresh herbs (parsley or thyme)
Instructions
- Heat a generous drizzle of olive oil in a non-stick skillet over medium heat.
- Generously season the chicken breasts with salt and pepper.
- Once the skillet is warm, carefully lay the chicken in the pan. Cook for about 5–7 minutes on each side, or until the chicken turns golden brown.
- After cooking, transfer the chicken to a plate and cover it loosely with aluminum foil.
- Add minced garlic and the fresh vegetables to the skillet. Sauté until the vegetables soften, about 4–5 minutes.
- Pour the chicken broth into the skillet, allowing it to simmer for a couple of minutes.
- Return the chicken to the skillet, sprinkle with fresh herbs, and let it mingle with the vegetables for another minute before serving.
Notes
This dish can be stored in the refrigerator for up to 3 days. You can also use turkey or plant-based proteins as a substitute for chicken.
