- 3–4 tbsp mayonnaise
- 1 tsp mustard (optional)

- 2 tbsp diced celery, onion, or grated carrots (optional)
- 4–6 slices of bread (whole grain, sourdough, or white)
- Butter for toasting

Instructions
- Shred the chicken using two forks until fluffy.
- Chop the hard-boiled eggs into small pieces.
- Combine the chicken and eggs in a mixing bowl.
- Add mayonnaise and mustard (if using) and stir to coat.
- Incorporate diced celery, onion, or carrots if desired.
- Toast the bread slices on a skillet or toaster until golden brown.
- Butter each slice while warm.
- Assemble the sandwich with the chicken-egg mixture and lettuce.
- Slice diagonally and serve immediately.
Notes
Make the filling ahead of time and store in the fridge for quick assembly later.
