Description

A nostalgic sandwich combining creamy mayonnaise, tender shredded chicken, and hard-boiled eggs, all nestled between golden toasted bread.


Ingredients

  • 1 cup boiled and shredded chicken breast
  • 23 hard-boiled eggs, chopped
  • 34 tbsp mayonnaise
  • 1 tsp mustard (optional)
  • Salt and black pepper to taste
  • 2 tbsp diced celery, onion, or grated carrots (optional)
  • 46 slices of bread (whole grain, sourdough, or white)
  • Butter for toasting
  • Lettuce

Instructions

  1. Shred the chicken using two forks until fluffy.
  2. Chop the hard-boiled eggs into small pieces.
  3. Combine the chicken and eggs in a mixing bowl.
  4. Add mayonnaise and mustard (if using) and stir to coat.
  5. Incorporate diced celery, onion, or carrots if desired.
  6. Toast the bread slices on a skillet or toaster until golden brown.
  7. Butter each slice while warm.
  8. Assemble the sandwich with the chicken-egg mixture and lettuce.
  9. Slice diagonally and serve immediately.
