Description

A refreshing and vibrant salad featuring quinoa, fresh cilantro, and lime juice, bringing together flavors and nutrients in every bite.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1 cup bell peppers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, diced (optional)

Instructions

  1. Rinse the quinoa: Rinse the quinoa under cold running water in a colander for about 30 seconds.
  2. Cook the quinoa: In a medium-sized pot, combine the rinsed quinoa and 2 cups of water. Bring to a boil, cover, and simmer for about 15 minutes until fluffy.
  3. Fluff and cool: Remove from heat, let sit for 5 minutes, fluff with a fork, and allow to cool.
  4. Mix the ingredients: In a large mixing bowl, combine the cooled quinoa, chopped cilantro, lime juice, diced bell peppers, cherry tomatoes, and red onion. Season with salt and pepper.
  5. Toss gently: Using a spatula, toss until well combined and adjust seasoning to taste.
  6. Add avocado (if using): Gently fold in the diced avocado just before serving.
  7. Serve: Enjoy chilled or at room temperature.

Notes

For added flavor, you can cook the quinoa in vegetable or chicken broth. This salad can be made a day in advance for the flavors to meld.
