Description

Delicious churro muffins that combine the warm, comforting flavors of cinnamon and sugar with a tender crumb and gooey dulce de leche center.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dulce de leche or caramel sauce
  • 1/4 cup granulated sugar for rolling
  • 1 tablespoon ground cinnamon for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your muffin tin by greasing it with butter or non-stick spray.
  2. Combine the flour, 1/2 cup sugar, baking powder, salt, and ground cinnamon in a mixing bowl.
  3. Whisk together the melted butter, egg, and vanilla extract in another bowl until frothy.
  4. Fold the wet ingredients into the dry ingredients gently until just combined.
  5. Fill the muffin cups halfway, add a generous dollop of dulce de leche, then cover with more batter until 3/4 full.
  6. Bake in the preheated oven for 15-20 minutes or until golden brown and a toothpick comes out clean.
  7. Toss the warm muffins in a mixture of 1/4 cup sugar and 1 tablespoon cinnamon for a delightful finish.
  8. Serve immediately and enjoy!

Notes

Make-ahead tips: Prepare batter a day in advance and store in the fridge. Can also be made in an air fryer for a quicker version.
