Delicious churro muffins that combine the warm, comforting flavors of cinnamon and sugar with a tender crumb and gooey dulce de leche center.

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dulce de leche or caramel sauce
- 1/4 cup granulated sugar for rolling
- 1 tablespoon ground cinnamon for rolling
Instructions
- Preheat your oven to 350°F (175°C). Prepare your muffin tin by greasing it with butter or non-stick spray.
- Combine the flour, 1/2 cup sugar, baking powder, salt, and ground cinnamon in a mixing bowl.
- Whisk together the melted butter, egg, and vanilla extract in another bowl until frothy.
- Fold the wet ingredients into the dry ingredients gently until just combined.
- Fill the muffin cups halfway, add a generous dollop of dulce de leche, then cover with more batter until 3/4 full.
- Bake in the preheated oven for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Toss the warm muffins in a mixture of 1/4 cup sugar and 1 tablespoon cinnamon for a delightful finish.
- Serve immediately and enjoy!
Notes
Make-ahead tips: Prepare batter a day in advance and store in the fridge. Can also be made in an air fryer for a quicker version.
