Description

A delightful blend of rich chocolate and tangy sourdough, this bread creates a unique flavor experience perfect for any occasion.


Ingredients

Scale
  • 500g Bread Flour
  • 100g Cocoa Powder
  • 100g Sourdough Starter
  • 350ml Water
  • 10g Salt
  • 150g Dark Chocolate, chopped
  • 30g Sugar

Instructions

  1. Combine the bread flour, cocoa powder, and sugar in a mixing bowl.
  2. Add the sourdough starter and water, mixing until a shaggy mass forms.
  3. Knead the dough by hand for about 10 minutes until smooth and elastic.
  4. Incorporate the salt into the dough.
  5. Fold in the dark chocolate evenly.
  6. Transfer the dough to an oiled bowl and let it rise covered for 4 to 6 hours until doubled.
  7. Shape the dough into a round loaf and allow it to rise for an additional 1 to 2 hours.
  8. Preheat the oven to 450°F (230°C) with a Dutch oven inside.
  9. Transfer the dough onto parchment paper and bake covered for 30 minutes.
  10. Remove the lid and bake for an additional 15 minutes until dark brown.
  11. Cool on a wire rack before slicing.

Notes

Make the dough ahead and refrigerate overnight for more complex flavors. Serve with butter, jam, or as a dessert.
