Description

This delightful chipotle salsa combines fresh pineapple, zesty lime, and smoky chipotle for a vibrant and flavorful dip.


Ingredients

  • 1/2 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 12 chipotle peppers in adobo sauce (to taste)
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Begin by dicing the pineapple into small, bite-sized pieces.
  2. Finely chop the red onion and tomatoes, aiming for even pieces.
  3. In a medium mixing bowl, combine the diced pineapple, red onion, and tomatoes.
  4. Chop the chipotle peppers in adobo sauce, starting with one pepper.
  5. Toss in the chopped cilantro, stirring everything together gently.
  6. Squeeze in the lime juice, catching any seeds.
