Description
A delightful chicken scampi dish with tender chicken, garlic, lemon, and white wine, served over al dente pasta.
Ingredients
Scale
- 8 oz spaghetti or linguine
- 1 lb chicken breast, sliced
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1/4 cup butter
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Begin by boiling a generous pot of salted water. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- Melt the Butter: In a large skillet over medium heat, melt the butter until it starts to sizzle gently.
- Sauté the Garlic: Add the minced garlic to the skillet. Sauté for about a minute, stirring until fragrant but not browned.
- Cook the Chicken: Add the sliced chicken to the skillet, seasoning with salt and pepper. Cook for about 6-7 minutes, turning once, until golden and cooked through.
- Add the Wine and Lemon Juice: Pour the white wine and freshly squeezed lemon juice into the pan, stirring to combine. Let the sauce simmer for 3-4 minutes.
- Combine with Pasta: Carefully add the cooked pasta to the skillet, tossing to coat every strand in sauce. Add reserved pasta water if needed.
- Serve and Garnish: Plate the pasta and chicken, garnishing with chopped parsley.
Notes
For a lighter option, use shrimp instead of chicken. Add seasonal vegetables for extra nutrients.
