Description

Ingredients

  • 4 chicken thighs or breasts, bone-in, skin-on
  • 4 medium potatoes, diced (Yukon Golds or red)
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the marinade by whisking together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a large bowl.
  3. Toss the chicken and diced potatoes in the marinade until evenly coated.
