- 1 lb shrimp, peeled and deveined

- 2 tablespoons olive oil

- Salt and pepper to taste
- 1 bell pepper, diced (any color)
- 1 onion, diced
- 2 cups cooked rice or quinoa (optional)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the steak with salt, pepper, and garlic powder, then sear for 4-5 minutes on each side.
- Remove the steak and let it rest for a few minutes.
- Sauté the shrimp, bell pepper, and onion in the same skillet for 3-4 minutes.
- Slice the steak thinly against the grain and return it to the skillet.
- Sprinkle shredded cheese over the top, cover, and let it melt for about 2 minutes.
- Serve warm over rice or quinoa, garnishing with fresh herbs if desired.
