Instructions
- Heat the olive oil in a large skillet over medium heat. Allow it to shimmer just slightly.
- Add the ground beef, breaking it apart with a spatula until it’s crumbled and well browned, usually about 5-7 minutes. Drain any excess fat.
- Stir in the taco seasoning and the can of Rotel tomatoes, simmering for about 5 minutes.
- Warm the tortillas in the microwave for about 30 seconds, or in a separate pan over low heat until they’re soft and pliable.
- Assemble the tacos by placing a generous scoop of the beef mixture on each tortilla. Top with shredded cheese, crisp lettuce, tangy diced tomatoes, and a dollop of sour cream.
