Description

  • 2 tsp allspice
  • 2 Scotch bonnet peppers, finely minced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp thyme
  • 1 cup rice (white or brown)
  • 1 cup fresh pineapple, chopped
  • 1/2 red onion, chopped
  • 1/4 cup cilantro, chopped
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1 cup plantain chips

Instructions

  1. Marinate the chicken: In a large mixing bowl, combine allspice, finely minced Scotch bonnet peppers (wear gloves if necessary), minced garlic, grated ginger, thyme, and salt. Add the chicken breasts and ensure they are completely coated in the marinade. Cover and let it marinate in the fridge for at least 1 hour, ideally overnight for maximum flavor.
  2. Cook the rice: Follow the package instructions for cooking your rice. Once prepared, set it aside and keep warm.
  3. Grill or bake the chicken: Preheat your grill or oven to a high temperature. Grill the marinated chicken for about 15–20 minutes, or bake in the oven for 25–30 minutes. Ensure the internal temperature reaches 165°F to guarantee it’s perfectly cooked. The chicken should have enticing grill marks or be golden-brown if baked.
  4. Prepare the pineapple salsa: While the chicken cooks, chop fresh pineapple, red onion, and cilantro. Combine these in a bowl, adding lime juice and a pinch of salt. Taste and adjust the seasoning as necessary—the salsa should burst with freshness!
  5. Serve the chicken: Once the chicken has cooked, allow it to rest before slicing it into tender pieces. Place the sliced chicken over a bed of fluffy rice, generously topping it with pineapple salsa.
