Description

Moist and tender bars that blend the sweetness of butterscotch with the earthiness of zucchini for a delightful treat.


Ingredients

  • 2 cups grated zucchini
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C), and grease a 9×13-inch baking pan.
  2. Blend together the grated zucchini, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. Sift together the flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  4. Fold the dry mixture into the wet ingredients, mixing gently until just combined.
  5. Fold in the butterscotch chips.
  6. Pour the batter into the prepared baking pan, spreading it evenly.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Cool in the pan before slicing into squares.
