Instructions
- Preheat your oven to 350°F (175°C), and grease a 9×13-inch baking pan.
- Blend together the grated zucchini, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Sift together the flour, baking soda, baking powder, salt, and cinnamon in another bowl.
- Fold the dry mixture into the wet ingredients, mixing gently until just combined.
- Fold in the butterscotch chips.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool in the pan before slicing into squares.
