- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup butterscotch chips
Instructions
- Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking dish.
- Combine graham cracker crumbs with melted butter in a medium bowl until damp and press into the bottom of the baking dish.
- Beat the softened cream cheese using an electric mixer until silky smooth, then gradually add sugar until creamy.
- Add vanilla extract and eggs one by one, mixing well after each addition.
- Fold in butterscotch chips, distributing them evenly through the mixture.
- Pour the cheesecake filling over the crust, spreading evenly.
- Bake for 25-30 minutes until the center is set but still slightly jiggly.
- Cool in the pan to room temperature, then refrigerate for at least 3 hours before slicing.
Notes
For best results, use room temperature cream cheese and avoid overbaking the bars.
