Description

Deliciously rich cheesecake bars with a crunchy graham cracker crust and buttery butterscotch chips.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking dish.
  2. Combine graham cracker crumbs with melted butter in a medium bowl until damp and press into the bottom of the baking dish.
  3. Beat the softened cream cheese using an electric mixer until silky smooth, then gradually add sugar until creamy.
  4. Add vanilla extract and eggs one by one, mixing well after each addition.
  5. Fold in butterscotch chips, distributing them evenly through the mixture.
  6. Pour the cheesecake filling over the crust, spreading evenly.
  7. Bake for 25-30 minutes until the center is set but still slightly jiggly.
  8. Cool in the pan to room temperature, then refrigerate for at least 3 hours before slicing.

Notes

For best results, use room temperature cream cheese and avoid overbaking the bars.
