Description

A vibrant Black Bean Avocado Salad bursting with fresh flavors and creamy textures, perfect for any occasion.


Ingredients

  • 1 can black beans, rinsed and drained
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Combine the rinsed black beans, diced avocados, halved cherry tomatoes, finely chopped red onion, and fresh cilantro in a large bowl, folding gently.
  2. Whisk together the lime juice, ground cumin, chili powder, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad and gently toss to coat.
  4. Chill in the refrigerator for up to 30 minutes before serving for optimal flavor.

Notes

For a make-ahead option, prepare the salad a few hours in advance and store the dressing separately to avoid browning of the avocados.
