Description

A refreshing and vibrant salad featuring rotisserie chicken mixed with a creamy tzatziki sauce, crunchy cucumbers, and fresh herbs, perfect for sunny days.


Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh dill or mint for garnish

Instructions

  1. In a large mixing bowl, combine Greek yogurt, diced cucumber, minced garlic, olive oil, lemon juice, and season with salt and pepper. Stir until creamy.
  2. Gently fold in the shredded rotisserie chicken until well coated.
  3. Chill in the fridge for at least 30 minutes to let flavors meld.
  4. Serve in bowls or on a platter, garnished with fresh dill or mint.

Notes

You can prepare the tzatziki sauce a day in advance. Just add the chicken when you’re ready to serve to keep it fresh.
