Description

Taco Tater Tot Casserole is a delicious and easy-to-make dish that combines the flavors of tacos with crispy tater tots, perfect for family dinners or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 3 cups tater tots
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
  4. In a greased baking dish, spread the beef mixture evenly on the bottom.
  5. Top the beef mixture with tater tots, arranging them in a single layer.
  6. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  7. Remove from the oven and sprinkle shredded cheese on top. Return to the oven for an additional 5-10 minutes, until the cheese is melted.
  8. Let cool for a few minutes before serving. Garnish with sour cream and green onions if desired.
