- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 3 cups tater tots
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream (optional)
- Chopped green onions for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
- In a greased baking dish, spread the beef mixture evenly on the bottom.
- Top the beef mixture with tater tots, arranging them in a single layer.
- Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
- Remove from the oven and sprinkle shredded cheese on top. Return to the oven for an additional 5-10 minutes, until the cheese is melted.
- Let cool for a few minutes before serving. Garnish with sour cream and green onions if desired.
