Ingredients
Scale
- 1 big red bell pepper
- 1–2 pieces Bird’s eye chili
- 1 small yellow onion
- 6 cloves garlic
- 2 cups water
- 1/2 cup vinegar
- 1 tbsp salt
- 1 cup sugar
- 2 tbsp potato starch/corn starch
- 2 tbsp water
Instructions
- Cut off the tops of the bird’s eye chilis and remove the seeds if you prefer less heat. Coarsely chop them, along with the bell pepper, onion, and garlic.
- In your blender or food processor, combine the bell pepper, bird’s eye chilis, onion, garlic, and 2 cups of water. Pulse several times until you achieve a fine chop.
- Transfer the blended mixture into a medium-sized pot. Add the sugar, salt, and vinegar, stirring to combine.
- Place the pot over medium heat and bring the mixture to a gentle simmer.
- Once dissolved, reduce the heat to low. Mix the potato starch with 2 tablespoons of water until smooth, then incorporate it into the simmering sauce while stirring constantly.
- Allow the sauce to simmer for a few more minutes until it thickens slightly, then remove from heat and let it cool.
- Store in a jar in the refrigerator for up to 4 weeks.
Notes
Customize the heat level by adjusting the number of Bird’s eye chilis used. This sauce is perfect for dipping or as a condiment for various dishes.
