Fluffy pancakes with a creamy cheesecake filling and a sweet strawberry sauce.

- 1½ cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1¼ cups milk
- 1 egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 4 oz cream cheese (softened)
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1½ cups fresh strawberries (hulled and chopped)
- 2 tablespoons sugar
- 1 teaspoon lemon juice
Instructions
- In a saucepan, combine the chopped strawberries, sugar, and lemon juice. Cook over medium heat until softened. Mash some berries to create a sauce and set aside to cool.
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Let the batter rest for 10 minutes.
- In a separate bowl, blend the cream cheese, powdered sugar, vanilla extract, and milk until smooth.
- Heat a skillet over medium heat and grease lightly. Pour ¼ cup of batter for each pancake and cook until bubbles form, about 2-3 minutes. Flip and cook until golden brown.
- Layer pancakes with cheesecake filling and strawberry sauce, repeating for desired layers.
- Serve with maple syrup or powdered sugar, and enjoy!
Notes
Make ahead by preparing the strawberry sauce a day in advance. Avoid overmixing to keep pancakes tender.
