Description

Fluffy pancakes with a creamy cheesecake filling and a sweet strawberry sauce.


Ingredients

  • 1½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1¼ cups milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese (softened)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1½ cups fresh strawberries (hulled and chopped)
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions

  1. In a saucepan, combine the chopped strawberries, sugar, and lemon juice. Cook over medium heat until softened. Mash some berries to create a sauce and set aside to cool.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Let the batter rest for 10 minutes.
  5. In a separate bowl, blend the cream cheese, powdered sugar, vanilla extract, and milk until smooth.
  6. Heat a skillet over medium heat and grease lightly. Pour ¼ cup of batter for each pancake and cook until bubbles form, about 2-3 minutes. Flip and cook until golden brown.
  7. Layer pancakes with cheesecake filling and strawberry sauce, repeating for desired layers.
  8. Serve with maple syrup or powdered sugar, and enjoy!

Notes

Make ahead by preparing the strawberry sauce a day in advance. Avoid overmixing to keep pancakes tender.
