- 2 cups pancake mix
- 2 ripe bananas, mashed
- 1 cup strawberries, chopped
- 1/4 cup sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- In a large mixing bowl, blend pancake mix, mashed bananas, chopped strawberries, sugar, milk, vegetable oil, and vanilla extract until just combined.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 50-60 minutes, checking doneness with a toothpick.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, mix powdered sugar and milk until smooth, then drizzle over cooled bread.
- Slice, serve, and enjoy!
Notes
You can prepare the batter a day in advance and store it in the fridge. For a healthier option, substitute ingredients as needed.
