Description

A delightful blend of sweet strawberries and ripe bananas baked into a tender loaf, perfect for breakfast or a snack.


Ingredients

  • 2 cups pancake mix
  • 2 ripe bananas, mashed
  • 1 cup strawberries, chopped
  • 1/4 cup sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In a large mixing bowl, blend pancake mix, mashed bananas, chopped strawberries, sugar, milk, vegetable oil, and vanilla extract until just combined.
  3. Pour the batter into the prepared loaf pan, spreading it evenly.
  4. Bake for 50-60 minutes, checking doneness with a toothpick.
  5. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. For the glaze, mix powdered sugar and milk until smooth, then drizzle over cooled bread.
  7. Slice, serve, and enjoy!
